Sethi agrees that the city’s energy makes it an ideal match. “Being the first Indian restaurant on the Strip and in a casino is a huge honor, and it allows us to really make Indian food that much familiar in the U.S.,” he says. “We felt Gymkhana would seamlessly integrate into Las Vegas. The city matches the vibrancy and the allure of Gymkhana.”

At the helm of the kitchen is executive chef Srikant Kumar, who trained with The Oberoi Group and has cooked at Michelin-recognized restaurants in Delhi, Dubai, and Washington, D.C. His global experience, paired with Gymkhana’s approach to Indian cuisine, sets the tone for the Vegas outpost.
“Having worked in the UK, I’ve long been familiar with JKS Restaurants and hold great admiration for the remarkable influence they’ve had in shaping Indian cuisine on a global stage,” Kumar says. “I jumped at the opportunity to work alongside Karam Sethi to bring Gymkhana, the brand’s crown jewel, to Aria in Las Vegas.”

To celebrate its new home, Kumar and Sethi have introduced a few dishes exclusive to the U.S. debut. “One of the most exciting aspects of Gymkhana Las Vegas is the introduction of beef to the menu, a first for the brand,” Kumar says. “I’m particularly looking forward to serving our Beef Short Rib Pepper Fry — a dish that brings together slow-cooked short ribs with the bold flavors of black pepper, curry leaves, and roasted South Indian spices, served alongside a flaky Malabar paratha.”
Other Las Vegas exclusives include Wagyu Keema Naan, stuffed with spiced wagyu mince and paired with cucumber and cumin raita, and a Goan Lobster Curry enriched with coconut milk, coriander, and red chile. Meanwhile, London favorites such as Tandoori Masala Lamb Chops, Venison Biryani, and Chicken Butter Masala will anchor the menu and offer a familiar link to the original restaurant.

“We’ve spent a lot of time over the past six months going through recipe development with the JKS team,” Yumul says. “There’s drama and ceremony to the large-format cocktails that will excite guests as much as the food.”
Sethi calls the cocktails “classics with an Indian spin — spice-forward, celebratory.” Highlights include the Maharaja Margarita, where smoky pineapple meets reposado tequila with a chaat masala rim; the Delhi Dalgona, a reverse Espresso Martini topped with whipped espresso foam; and the Pina Col-Lassi, a clarified piña colada inspired by South Indian coconut lassis.
For an added dose of theater, a Punch Trolley Service will circulate the dining room, serving large-format cocktails tableside in gleaming silver bowls.
